Next time you make muffins, try using an ice cream scoop to fill the cups. To make it extra easy, spray the scoop with non-stick spray (like Pam). Works for me!

Something similar that I do is use the measuring cup I already have out on the counter from the ingredients... usually a 1/3 or 1/2 cup. It works great when sprayed down, or with the residue of the oil already on it.
